Sisters and Sarah Lawrence College alumnae Carole Darden-Lloyd and Norma Jean Darden are the authors of Spoonbread and Strawberry Wine: Recipes and Reminiscences of a Family. Norma is the owner of Miss Mamie’s Spoonbread Too, a classic comfort food destination located in Manhattan.

Sweet Potato Pie

From the cookbook Spoonbread and Strawberry Wine by alumnae Norma Jean Darden and Carole Darden-Lloyd.

Ingredients

  • 3 large eggs
  • 1 ¼ cups sugar
  • Dash of salt
  • 1 teaspoon cinnamon
  • ½ teaspoon allspice
  • ¼ teaspoon nutmeg
  • 1 cup heavy cream
  • 3 cups cooked mashed
  • sweet potatoes
  • 1 unbaked 10" pie shell

Directions

  1. Beat eggs well, add sugar, salt, and spices, and mix thoroughly. 
  2. Add cream and stir. 
  3. Add mashed sweet potatoes and mix thoroughly. 
  4. Pour into pie shell and bake in preheated 350° oven for 1 ½ hours or until firm.
